I love coming up with something simple that tastes great. A few weeks ago I was craving something rich and came up with this super easy Spinach Artichoke Chicken that uses only 4 ingredients.
Recipe
6 chicken breasts (I like the thin ones that cook easily)
3-4 cups Spinach Artichoke Dip (I like the one from Costco, but any kind will do; however, it can't be the Greek Yogurt kind)
1 sleeve of Ritz Crackers, crushed (I think Panko bread crumbs would be even better)
5 Tablespoons of butter, melted
Cooked brown or white rice
Crush the Ritz crackers and pour the melted butter into them, mix. Take your thawed chicken breasts and coat them with a good amount of Spinach Artichoke dip on all sides. Roll them in the Ritz cracker mixture or Panko bread crumbs. Place on a foil lined cookie sheet and cook per chicken's instructions. Watch the crackers or bread crumbs carefully...if they start to look to brown, cover the top with foil. I had to cover mine.
While the chicken is cooking, make the rice. When chicken is done, place the breast of chicken plus the extra sauce over the rice and serve with a veggie.
